Easy Pumpkin Coffee Cake

As the days turn cooler and we head into fall, I love making my family a yummy breakfast treat. But sometimes I want it to be the quick and easy version. Que this pumpkin coffee cake that uses pumpkin pancake mix as the base! This has the fall pumpkin flavor we all love, is delicious and moist, and has a perfect crumbly coffee cake topping that comes together in a snap. We love to use the Trader Joe's pumpkin pancakes mix that is sold seasonally (I always buy several boxes to stock up on throughout the year), but you can use any brand of pumpkin pancake mix that you like.

Recipe:
- 3 cups pumpkin pancake mix
- 3/4 cup sugar
- 1 ¼ cup milk
- 1/2 cup oil
- 2 eggs
Topping:
- 1 1/2 cup oats
- 2/3 cup brown sugar
- 2 tsp. cinnamon
- 6 tbsp. Butter, cut into half inch cubes.
Instructions:
1. Preheat over to 350 degrees, and grease a 9x13 inch pan.
2. In a large bowl, mix together the pancake mix and sugar. Add in the milk, oil and eggs and stir until well blended.
3. Pour the coffee cake batter into the greased 9x13 pan.
4. In a medium sized bowl, mix the oats, brown sugar, and cinnamon. Cut in the butter using a pastry cutter or some forks until the mixture is crumbly.
5. Sprinkle the crumble evenly over the top of the batter.
6. Bake in a pre-heated oven for 30-35 minutes, or until a toothpick comes out clean.
